During the Exodus from Egypt, the firstborns were delivered before the rest of the nation, and then they were exchanged for the Tribe of Levi (Numbers 3:45-48). Their role was to be in full time service to God. The Aaronic priesthood was actually exempt from keeping the Sabbath.
Just as all features of the Law were to bring them to Christ—Jesus is the fulfillment of all features of that Law. He is the high priest of our profession—that is we are part of that priesthood. Those who have come to Christ are of the antitypical Levite class.
Heb 3:1 Wherefore, holy brethren, partakers of the heavenly calling, consider the Apostle and High Priest of our profession, Christ Jesus;
Heb 4:14 Seeing then that we have a great high priest, that is passed into the heavens, Jesus the Son of God, let us hold fast our profession.
So, now looking at Jesus’ words on the matter we find that the Sabbath is still a symbol, Jesus being the antitype of it. Jesus is the Lord of the Harvest. Most of Jesus’ works were done on the Sabbath, because it is a shadow of things to come (i.e. the Kingdom). The real sabbath that Jesus offers is a liberation from the Law, from sin.
Mat 12:5 Or have ye not read in the law, how that on the sabbath days the priests in the temple profane the sabbath, and are blameless? 6 But I say unto you, That in this place is one greater than the temple. 7 But if ye had known what this meaneth, I will have mercy, and not sacrifice, ye would not have condemned the guiltless. 8 For the Son of man is Lord even of the sabbath day.
Mar 2:23-28 And it came to pass, that he went through the corn fields on the sabbath day; and his disciples began, as they went, to pluck the ears of corn. 24 And the Pharisees said unto him, Behold, why do they on the sabbath day that which is not lawful? 25 And he said unto them, Have ye never read what David did, when he had need, and was an hungred, he, and they that were with him? 26 How he went into the house of God in the days of Abiathar the high priest, and did eat the shewbread, which is not lawful to eat but for the priests, and gave also to them which were with him? 27 And he said unto them, The sabbath was made for man, and not man for the sabbath: 28 Therefore the Son of man is Lord also of the sabbath.
Jesus, the Lord of the Sabbath gives us rest. The rest is from our own works and not the works of God. And when it speaks of God resting—it doesn’t mean He didn’t do anything—He rested from His creative works only. So likewise when we come into Christ, we cease or rest from our own works and do the works of Him that called us. That is the rest that we are given and to continually observe.
Mat 11:28 Come unto me, all ye that labour and are heavy laden, and I will give you rest. 29 Take my yoke upon you, and learn of me; for I am meek and lowly in heart: and ye shall find rest unto your souls.
Heb 4:4-11 For he spake in a certain place of the seventh day on this wise, And God did rest the seventh day from all his works. 5 And in this place again, If they shall enter into my rest. 6 Seeing therefore it remaineth that some must enter therein, and they to whom it was first preached entered not in because of unbelief: 7 Again, he limiteth a certain day, saying in David, To day, after so long a time; as it is said, To day if ye will hear his voice, harden not your hearts. 8 For if Jesus had given them rest, then would he not afterward have spoken of another day. 9 There remaineth therefore a rest to the people of God. 10 For he that is entered into his rest, he also hath ceased from his own works, as God did from his. 11 Let us labour therefore to enter into that rest, lest any man fall after the same example of unbelief.

Lastly one of the most telling scriptures. We are not to make an issue of Sabbath, because the antitypical fulfillment of the Sabbath is what is important, not the ceremonial observance of one day over another. We are the body of Christ are part of that antitypical fulfillment.
Col 2:16-17 Let no man therefore judge you in meat, or in drink, or in respect of an holyday, or of the new moon, or of the sabbath days: 17 Which are a shadow of things to come; but the body is of Christ.
